
today we prepared a drum of crystallized honey to go in a vat with a pump to be cinnamon creamed honey by tomorrow. to do so the barrel is opened and we hand mix the 700 lbs. of honey with a small pipe that has air blowing through the end to break up the crystallized honey (raw honey crystallizes over time). the air creates bubbles under the honey and then releases an honey scented burp. besides being mesmerized by the belching honey barrel, i couldn't help but notice the manliness of my hands. they've had perma-black gunk stuck in the creases for about 3 months. they're ' working hands' says my boss so he probably wouldn't have to admit they're worse than his. anyway, i've come to accept these hands of mine. they remind me of my dad. he's always had dirty, calloused, crooked, strong but meek hands. i'm not generally up for exposing my hand dirt, but i think it's time.
